I recently purchased a 600GPH overflow and a return pump capable of 800GPH at 4' head for my 72g. The thought of a 6', 125g has really been on my mind though. If I were to go with the bigger tank (and it werent drilled) would this overflow and pump be enough?

I currently have a 20g that I would use for skimmer / return and then get a nother 10g or 20g and make a fuge out of it. How much light dioes a fuge require?

Also what type of lighting would I need to keep fish and softies in there? Would 4- T5's in the canopy, staggered, be enough? How hard is it to retrofit a hood with lights? Thanks!

Your return pump does not have to be all, or even most, of your flow. Most people want as much flow as they can have and they like having returns or closed loops doing most, if not all, of their flow ... but you can put powerheads or 'external' closed loops on your system (Newt had a Mag 9.5 on what I consider an external closed loop ... ie not drilled into the tank). Most people would want more than 600g per hour flow on a 125 gallon tank so you would have to figure out how to get more in there.

Lighting, for fish only you can do what ever you think looks best. Even in softies though, there are different requirement levels depending on what type you want.
